(Serves 4)

1 tsp salt
Dash of pepper
1 tsp garlic powder
Zest and juice of 1 lemon
2 tsp dried parsley
1 tbsp chopped fresh rosemary
6 chicken thighs
1/2 tbsp vegetable oil
6 garlic cloves, peeled
12 Campari tomatoes
1/2 cup fresh basil leaves

1. Preheat your oven to 425°F.
2. In a small bowl, combine salt, pepper, garlic powder, lemon zest, parsley, and rosemary, then spread mixture on both sides of the chicken thighs.
3. Heat oil in a skillet over high heat, then add chicken, garlic, tomatoes, and basil leaves. Cook for two minutes, then reduce to medium and cook for five more minutes, or until golden.
4. Place the skillet in the oven and cook for six minutes before flipping the chicken and cooking for another seven, or until centres are no longer pink.
5. Cool for five minutes, sprinkle with lemon juice, and serve immediately.
